Recipe: Breakfast ice cream sundae

If you’re looking for something sweet for breakfast tomorrow, here’s your recipe! It’s a sweet, satifying vegan breakfast recipe.

My daughter, the vegan, makes the best, most innovative breakfasts, not to mention uber-healthy and filling. Here’s one of her latest creations for a vegan and gluten-free breakfast sundae with frozen bananas, pears poached in warm spices, granola and fresh fruit.

Here’s how to make this yummy, naturally sweet, vegan breakfast sundae.

In a small saucepan, combine 1 cup water, 1 star anise, 1 cinnamon stick, 1 teaspoon vanilla and 1/2 teaspoon freshly grated nutmeg. Bring to a simmer over medium heat.  Half a pear and remove the seeds and stem and place it into the simmering mixture for 15 minutes or until tender.

In a bowl, mash one frozen banana, top with the poached pear, 1 tablespoon flax seeds, 2 tablespoons of granola of your choice and fresh fruit.
